    Classic Kimchi Jjigae (Kimchi Stew)

    🛒 Ingredients

    • Core: 2 cups Aged Kimchi + 1/2 cup Kimchi Brine
    • Protein: 250g Pork Belly, 1/2 block Tofu
    • Aromatics: 1/2 Onion, 2 Green Onions, 1 Green Chili
    • Seasoning: 1 tbsp Gochugaru, 1 tbsp Garlic, 1 tbsp Soup Soy Sauce
    • Broth: 2.5 cups Anchovy-Kelp Stock

    👨‍🍳 How to Cook

    1. Sauté pork belly until fat renders and edges brown.
    2. Add aged kimchi + sugar, stir-fry 5 min until translucent.
    3. Stir in gochugaru & garlic, cook 1 min.
    4. Add stock + kimchi brine. Boil, then simmer covered 20 min.
    5. Season with soup soy sauce. Lay tofu slices on top, simmer 5 min uncovered.
    6. Garnish with green onions. Serve bubbling hot with rice!
